Almond & orange crepes

These Almond & Orange Crepes are a healthy, low-calorie breakfast or dessert option that are easy to make and delicious. The crepes are made with almond flour and orange zest for added flavour, and can be filled with your choice of fresh fruit, yogurt, or nut butter.

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon orange zest
  • 1 tablespoon honey (optional)
  • Cooking spray

Method

  1. In a mixing bowl, whisk together the almond flour, coconut flour, and salt.
  2. Add in the eggs, almond milk, orange zest, and honey (if using) and whisk until a smooth batter forms.
  3. Heat a non-stick skillet or crepe pan over medium heat and lightly spray with cooking spray.
  4. Pour 1/4 cup of the batter onto the skillet and use a spatula to spread it out into a thin, even circle.
  5. Cook the crepe for 1-2 minutes on each side, or until lightly golden brown.
  6. Repeat with the remaining batter, spraying the skillet with cooking spray as needed.
  7. Serve the crepes with your choice of fresh fruit, yogurt, or nut butter.
